Simply cube and roast a whole sweet potato on a baking sheet. Then, after the pieces have cubed, add them to a food processor with 2 garlic cloves, 3 tablespoons tahini, 1 ½ teaspoons of kosher salt and the juice of ½ lime. While blending, add 1 cup of water until smooth. Season to taste and enjoy.
